I decided to cook up some of my famous banana pancakes yesterday on a whim -no particular reason, I needed a break from work and the kids hadn't had them in a while. I ended up very happy to have had the whim in the end -as I nearly perfected the banana pancake as a result. Everything about them was perfect, or at least very close -the only complaint I had was in the fluff. I would have liked to have seen a bit more in the end, but in my defense, I was completely out of eggs (a key ingredient for the fluff factor).

1 cup milk
1 mashed banana
4tbs melted hot butter (these 3 mixed first)
1 extra cup milk
griddle at 250 - 275°
I was changing the temp around the entire time, the ideal being somewhere between these two.
I can't say enough of how well these came out, they were perfectly cooked and the taste was simply inspiring.
